Ingredients

  • 1.5 lbs Chicken breast
  • 1 cup Fresh parsley
  • 0.5 cup Fresh oregano
  • 4 cloves Garlic
  • 0.25 cup Red wine vinegar
  • 0.5 cup Olive oil
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Cut the 1.5 lbs of chicken breast into 1-inch cubes.
  2. 2Prepare the chimichurri sauce: Add the 1 cup of fresh parsley, 0.5 cup of fresh oregano, 4 cloves of garlic, 0.25 cup of red wine vinegar, 0.5 cup of olive oil, 0.5 tsp of red pepper flakes, 1 tsp of salt, and 0.5 tsp of black pepper to a food processor. Pulse until the mixture is finely chopped.
  3. 3Place the 1-inch chicken cubes into a bowl. Pour the prepared chimichurri sauce over the chicken and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to marinate.
  4. 4Thread the marinated chicken cubes onto skewers, leaving a small space between each piece.
  5. 5Preheat your grill to medium-high heat (approximately 400°F or 200°C).
  6. 6Place the chicken skewers on the preheated grill. Grill for 10-12 minutes, turning them occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. 7Remove the chicken skewers from the grill and let them rest for 5 minutes before serving.
