Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1.5 lbs Potatoes
  • 6 cups Chicken broth
  • 6 oz Smoked sausage (pork or chicken)
  • 8 oz Collard greens
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and garlic and cook until softened, about 5 minutes.
  3. 3Peel and dice the potatoes. Add them to the pot along with the chicken broth.
  4. 4Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are very tender.
  5. 5While the potatoes are simmering, slice the smoked sausage into thin rounds.
  6. 6Roughly chop the collard greens.
  7. 7Use an immersion blender or regular blender to partially puree the soup, leaving some chunks of potato.
  8. 8Add the sliced smoked sausage and collard greens to the pot. Simmer for another 5-10 minutes, or until the collard greens are tender.
  9. 9Season with salt and pepper to taste.
