Bunny Chow (Shellfish-Free)

A South African street food consisting of a hollowed-out loaf of bread filled with curry. This version carefully avoids all shellfish.

Ingredients

  • 1 loaf Large Loaf of White Bread
  • 2 lbs Chicken Thighs
  • 2 medium Potatoes
  • 1 large Onion
  • 3 cloves Garlic
  • 3 tbsp Curry Powder
  • 1 tsp Turmeric
  • 1/2 tsp Chili Powder
  • 1 can Diced Tomatoes
  • 1 cup Vegetable Broth
  • 2 tbsp Vegetable Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Cut the chicken thighs into bite-sized pieces.
  2. 2Peel and dice the potatoes into 1-inch cubes.
  3. 3In a large pot or Dutch oven, heat vegetable oil over medium heat.
  4. 4Add onions and sauté until softened.
  5. 5Add garlic and chicken and brown on all sides.
  6. 6Stir in the curry powder, turmeric, and chili powder. Cook for 1 minute, stirring constantly.
  7. 7Add the potatoes, diced tomatoes, and vegetable broth.
  8. 8Bring to a simmer, then cover and cook for 45 minutes, or until chicken and potatoes are tender.
  9. 9Season with salt and pepper to taste.
  10. 10Cut the loaf of bread in half or quarters and hollow out the center, reserving the bread.
  11. 11Fill the hollowed-out bread with the chicken curry.
  12. 12Serve hot, with the reserved bread for dipping.
