Ingredients

  • 1.5 lbs White fish fillets (cod, snapper, or halibut)
  • 1 13.5 oz can Coconut milk
  • 3 tbsp Lime juice
  • 1 tbsp Lime zest
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 0.25 cup Cilantro, chopped

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a bowl, combine coconut milk, lime juice, lime zest, garlic, olive oil, salt, and pepper.
  3. 3Place fish fillets in a baking dish and pour the coconut milk mixture over them.
  4. 4Bake for 20-25 minutes, or until fish is cooked through and flakes easily with a fork.
  5. 5Garnish with cilantro before serving.
  6. 6Serve hot with rice or quinoa.
