Bolo de Fubá Cremoso (Creamy Cornmeal Cake)

Ingredients

  • 1 cup Cornmeal (Fubá)
  • 1 1/2 cups Sugar
  • 2 cups Milk
  • 3 large Eggs
  • 1/2 cup Vegetable Oil
  • 1/2 cup Grated Coconut
  • 2 tbsp Parmesan Cheese
  • 1 tbsp Baking Powder

Instructions

  1. 1Preheat your oven to 350°F (175°C). Take a baking pan and grease it, then dust it lightly with cornmeal.
  2. 2Measure the 1 cup of cornmeal, 1 1/2 cups of sugar, 2 cups of milk, 3 large eggs, 1/2 cup of vegetable oil, 1/2 cup of grated coconut, and 2 tablespoons of parmesan cheese into a blender.
  3. 3Blend these ingredients until the mixture is completely smooth.
  4. 4Add the 1 tablespoon of baking powder to the blender and pulse just a few times to mix it in. Do not over-blend.
  5. 5Pour the batter evenly into the prepared baking pan.
  6. 6Bake for 40 to 45 minutes. The cake is done when it is golden brown on top and the center still has a slightly creamy texture.
  7. 7Allow the cake to cool completely in the pan before you slice and serve it. This ensures it holds its shape.
