Bobotie with Apricot Jam Topping

Ingredients

  • 1 kg Ground beef
  • 1 large Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Curry powder
  • 1 teaspoon Turmeric
  • 1 medium Grated apple
  • 1/2 cup Raisins
  • 2 tablespoons Chutney
  • 2 tablespoons Worcestershire sauce
  • 1 cup Milk
  • 2 large Eggs
  • 2 Bay leaves
  • 1/4 cup Apricot jam

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large pan, brown the ground beef over medium heat. Drain any excess fat.
  3. 3Add the chopped onion and garlic to the pan and cook until softened.
  4. 4Stir in the curry powder, turmeric, grated apple, raisins, chutney, and Worcestershire sauce. Mix well and simmer for 10 minutes.
  5. 5In a separate bowl, whisk together the milk and eggs.
  6. 6Transfer the meat mixture to a baking dish and pour the egg mixture over the top. Stick bay leaves into the mixture.
  7. 7Bake for 30-40 minutes, or until the topping is set and golden brown.
  8. 8Spread apricot jam over the bobotie and bake for another 5 minutes.
  9. 9Remove from the oven and let it rest for a few minutes before serving.
