Ingredients

  • 2 pounds Potatoes
  • 1/4 cup Olive Oil
  • 4 cloves Garlic Cloves
  • 1/4 cup Fresh Cilantro
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel the 2 pounds of potatoes and cut them into 1/2-inch cubes.
  2. 2Heat the 1/4 cup of olive oil in a 12-inch skillet over medium-high heat, which is about 375°F (190°C).
  3. 3Carefully add the cubed potatoes to the hot skillet. Cook for 15 to 20 minutes, stirring occasionally, until the potatoes are golden brown and crispy on all sides. You'll see them turn a deep golden color and feel firm when poked.
  4. 4Add the 4 cloves of minced garlic, 1/4 cup of chopped fresh cilantro, 1/2 teaspoon of red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet with the potatoes.
  5. 5Stir constantly for 1 minute until the garlic smells fragrant. Be careful not to burn the garlic.
  6. 6Remove the skillet from the heat and serve the Batata Harra hot.
