Ingredients

  • 8 Pork sausages (ensure dairy-free)
  • about 910 g Potatoes, peeled and cubed
  • 2 large Onions, thinly sliced
  • 1.5 cups Vegetable broth
  • 2 tablespoons Dairy-free butter
  • 0.5 cup Dairy-free milk (almond or oat)
  • 1 tablespoon All-purpose flour (or gluten-free blend)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Thyme
  • to taste Salt and pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place the about 910 g of peeled and cubed potatoes into a large heavy-bottomed pot. Cover the potatoes with cold water by 2.54 cm (2.5 cm) and add 1 teaspoon of salt. Bring to a rolling boil over high heat (approximately 100°C / 100°C) and cook for 15-20 minutes, until the potatoes are easily pierced with a fork and feel tender.
  2. 2While the potatoes cook, heat a 30.48 cm skillet over medium-high heat (approximately 176.7-190.6°C / 175-190°C). Add the 8 pork sausages and cook for 15-20 minutes, turning occasionally, until they are golden brown on all sides and cooked through, reaching an internal temperature of 71°C.
  3. 3In a separate 25.4 cm skillet, heat the 1 tablespoon of olive oil over medium heat (approximately 148.9-162.8°C / 150-160°C). Add the 2 thinly sliced large onions and cook for 20-25 minutes, stirring frequently, until they are deeply golden brown and softened, indicating caramelization.
  4. 4Stir the 1 tablespoon of all-purpose flour into the caramelized onions and cook for 1 minute, stirring constantly, until the flour is lightly toasted and smells nutty.
  5. 5Gradually whisk in the 1.5 cups of vegetable broth until smooth. Bring the mixture to a gentle simmer over medium heat (approximately 93.33-98.89°C / 93-99°C), then stir in the 0.5 teaspoon of thyme and season with salt and pepper to taste.
  6. 6Reduce the heat to low (approximately 79.44-93.33°C / 80-93°C) and continue to cook for 5-10 minutes, stirring occasionally, until the gravy has thickened enough to coat the back of a spoon.
  7. 7Once the potatoes are tender, carefully drain them in a colander. Return the hot potatoes to the large heavy-bottomed pot and add the 2 tablespoons of dairy-free butter and 0.5 cup of dairy-free milk. Mash the potatoes until smooth and creamy, then season with salt and pepper to taste.
  8. 8Arrange the 8 cooked pork sausages over the mashed potatoes on serving plates. Spoon the onion gravy generously over the sausages and mashed potatoes.
