Ingredients

  • 3 cups Cooked rice
  • 2 cups Cooked pinto beans (or black-eyed peas)
  • 0.5 lb Queijo Coalho (or Halloumi), cubed
  • 0.5 lb Smoked sausage (linguica or chorizo), sliced
  • 0.5 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 0.5 each Bell pepper (green), chopped
  • 0.25 cup Cilantro, chopped
  • 2 tbsp Butter or olive oil

Instructions

  1. 1Heat the butter or olive oil in a large skillet over medium heat.
  2. 2Sauté the onion, garlic, and bell pepper until softened, about 5 minutes.
  3. 3Add the sliced sausage and cook until lightly browned, about 5 minutes.
  4. 4Add the cooked rice and beans to the skillet and stir to combine.
  5. 5Cook for 5 minutes, stirring occasionally.
  6. 6Add the cubed queijo coalho (or halloumi) and stir until the cheese begins to soften and melt slightly.
  7. 7Stir in the cilantro and serve hot.
