Bacon and Cabbage with Apple Cider Glaze

Ingredients

  • 1 pound Bacon, thick-cut
  • 1 medium head Green cabbage, cored and chopped
  • 1 medium Onion, chopped
  • 1 cup Apple cider
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1In a large skillet, cook bacon over medium heat until crispy. Remove bacon from skillet and set aside, reserving bacon fat in the skillet.
  2. 2Add chopped onion to the skillet and cook until softened, about 5 minutes.
  3. 3Add chopped cabbage to the skillet and cook until tender, about 10 minutes.
  4. 4While cabbage is cooking, prepare the apple cider glaze: In a small saucepan, combine apple cider, brown sugar, apple cider vinegar, and Dijon mustard.
  5. 5Bring to a boil, then reduce heat and simmer for 10 minutes, or until slightly thickened.
  6. 6Crumble the cooked bacon and add it to the skillet with the cabbage and onions.
  7. 7Pour the apple cider glaze over the mixture and toss to combine.
  8. 8Season with salt and pepper to taste. Serve hot.
