Arroz de Carreteiro (Wagoner's Rice)

Ingredients

  • 4 cups Cooked white rice
  • 1.5 lbs Cooked beef, shredded or diced
  • 6 slices Bacon, diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 medium Bell pepper, chopped
  • 0.5 cup Green onions, chopped
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Place a 12-inch skillet over medium-high heat (375°F / 190°C). Add the 6 slices of diced bacon to the skillet and cook for 8 to 10 minutes, stirring occasionally, until the bacon is crispy and golden brown. Use a slotted spoon to transfer the crispy bacon to a plate lined with paper towels, leaving the rendered bacon fat in the skillet.
  2. 2Return the skillet to medium-high heat (375°F / 190°C). Add the 2 tbsp of olive oil, the 1 medium chopped onion, and the 1 medium chopped bell pepper to the skillet with the bacon fat. Cook, stirring occasionally, for 5 to 7 minutes, until the onion is translucent and the bell pepper is softened; then add the 3 cloves of minced garlic and cook for 1 minute more, stirring constantly, until the garlic is fragrant.
  3. 3Add the 1.5 lbs of cooked beef, shredded or diced, to the skillet. Stir all ingredients together and continue to cook over medium-high heat (375°F / 190°C) for about 5 minutes, until the beef is thoroughly heated through.
  4. 4Reduce the heat to medium (300°F / 150°C). Add the 4 cups of cooked white rice and the reserved crispy bacon to the skillet. Stir thoroughly to combine all the ingredients evenly.
  5. 5Add the 1 tsp of salt and 0.5 tsp of black pepper to the mixture. Stir well to distribute the seasonings evenly throughout the rice.
  6. 6Stir in the 0.5 cup of chopped green onions. Continue to cook over medium heat (300°F / 150°C) for about 1 minute, stirring constantly, until the green onions are just wilted.
  7. 7Remove the skillet from the heat and serve the Arroz de Carreteiro hot.
