Aloo Paratha (Potato Stuffed Flatbread)

Whole wheat flatbread stuffed with spiced mashed potatoes, cooked on a griddle. A hearty and flavorful breakfast option popular in Nepal.

Ingredients

  • 2 cups Whole wheat flour
  • 2 cups Boiled potatoes
  • 1/2 cup Onion (finely chopped)
  • 1 number Green chilies (finely chopped)
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Cilantro (chopped)
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Oil or ghee (for cooking)

Instructions

  1. 1In a large bowl, combine the 2 cups of whole wheat flour with enough water to form a soft dough. Knead the dough for about 5-7 minutes until it is smooth and elastic. Cover the bowl with a damp cloth and let the dough rest for 15 minutes at room temperature. This resting period helps the gluten relax, making the dough easier to roll.
  2. 2While the dough rests, prepare the filling. In a separate bowl, thoroughly mash the 2 cups of boiled potatoes until no large lumps remain. Add the 1/2 cup of finely chopped onion, 1 number of finely chopped green chilies, 1 teaspoon of grated ginger, 2 tablespoons of chopped cilantro, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, and 1/2 teaspoon of salt to the mashed potatoes. Mix all these ingredients together until they are well combined.
  3. 3Divide the rested dough into 4 equal portions. Take one portion of dough and flatten it into a small circle, about 4-5 inches in diameter, on a lightly floured surface. You can use your fingers or a small rolling pin for this.
  4. 4Place about 2-3 tablespoons of the potato mixture in the center of the flattened dough circle. Carefully bring the edges of the dough up and around the filling, pinching them together at the top to completely seal the potato mixture inside. Gently flatten the stuffed dough ball with your hands, then carefully roll it out into a circle about 6-7 inches in diameter, being careful not to tear the dough. Repeat this process for the remaining dough portions and filling.
  5. 5Heat a griddle or a large non-stick skillet over medium heat (approximately 350°F or 175°C). Once the griddle is hot, place one stuffed paratha onto it. Cook for 3-4 minutes on one side, or until small bubbles start to appear and the underside is lightly golden.
  6. 6Flip the paratha and add about 1 teaspoon of oil or ghee to the cooked side. Cook the other side for another 3-4 minutes, adding another teaspoon of oil or ghee. Continue to flip and cook the paratha for a total of 6-8 minutes, pressing gently with a spatula, until both sides are golden brown and slightly crispy. Repeat this cooking process for the remaining parathas, adding oil or ghee as needed.
  7. 7Serve the Aloo Paratha hot, accompanied by yogurt or chutney if desired.
