Adas Polo Bites (Lentil Rice)

Ingredients

  • 1 cup Basmati Rice
  • 1/2 cup Green Lentils
  • 1/4 cup Raisins
  • 1/4 cup Dates
  • 1/2 Onion
  • 2 tablespoons Coconut Oil
  • 1/4 teaspoon Saffron Threads
  • 1/4 teaspoon Turmeric
  • 1/4 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 cups Water

Instructions

  1. 1Measure 1 cup of Basmati Rice and 1/2 cup of Green Lentils into separate bowls. Rinse both the rice and the lentils under cold running water until the water runs clear. Drain them well. Place the rinsed Basmati Rice in a bowl and cover it with water, letting it soak for 30 minutes.
  2. 2Finely chop the 1/2 Onion. Place a large heavy-bottomed pot over medium heat. Add the 2 tablespoons of Coconut Oil. Once the oil is melted and shimmering, add the chopped onion. Cook, stirring occasionally, for 5-7 minutes, or until the onion is softened and translucent.
  3. 3Add the 1/4 teaspoon Turmeric and 1/4 teaspoon Cinnamon to the pot with the softened onion. Stir constantly for 1 minute until fragrant.
  4. 4Add the drained 1/2 cup of Green Lentils and 2 cups of Water to the pot. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
  5. 5While the lentils simmer, drain the soaked 1 cup of Basmati Rice very well. After the lentils have simmered for 20 minutes, add the drained rice to the pot. Stir in the 1/4 cup Raisins, 1/4 cup Dates (chopped), 1/4 teaspoon Saffron Threads, and 1/2 teaspoon Salt.
  6. 6Gently stir all the ingredients in the pot to combine. Cover the pot tightly with a lid. Cook on low heat for 20-25 minutes, or until the rice is tender and all the water has been absorbed. You should be able to see small steam vents on the surface of the rice.
  7. 7Remove the pot from the heat and let it stand, covered, for 10 minutes. This allows the rice to finish steaming and become fluffy. Gently break up any clumps and serve the Adas Polo as small bites.
