Ingredients

  • 1 lb Smoked turkey
  • 1 lb Kontomire (cocoyam leaves)
  • 1 medium Onion
  • 2 medium Tomatoes
  • 1 small Scotch bonnet pepper
  • 1 can Coconut milk
  • 2 tbsp Palm oil
  • 1 inch Ginger
  • 3 cloves Garlic
  • 1 tsp Salt

Instructions

  1. 1Wash and chop the kontomire leaves. Steam until tender, about 15 minutes.
  2. 2Heat palm oil in a large pot over medium heat.
  3. 3Add chopped onion and cook until softened, about 5 minutes.
  4. 4Add chopped tomatoes, minced garlic, and grated ginger. Cook for another 5 minutes.
  5. 5Add chopped smoked turkey, cooked kontomire leaves, and scotch bonnet pepper.
  6. 6Pour in coconut milk and season with salt. Bring to a simmer.
  7. 7Simmer for 20 minutes, allowing the flavors to meld. Serve hot.
