Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 medium Onion
  • 1/2 cup Parsley
  • 1/4 cup Cilantro
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1 teaspoon Baking Powder
  • 2 tablespoons All-Purpose Flour
  • 2 tablespoons Chickpea Flour
  • For frying Olive Oil
  • 4 Pita Bread
  • 1/4 cup Tahini
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Water
  • 1 medium Cucumber
  • 1 medium Tomato
  • 1 cup Lettuce

Instructions

  1. 1Soak chickpeas in water for at least 8 hours or overnight.
  2. 2Drain and rinse the chickpeas. In a food processor, combine chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, baking powder, chickpea flour and all-purpose flour.
  3. 3Process until a coarse mixture forms. Do not over-process.
  4. 4Form the mixture into small balls or patties.
  5. 5Heat olive oil in a deep skillet over medium-high heat. Fry the falafel until golden brown and crispy, about 3-4 minutes per side.
  6. 6In a small bowl, whisk together tahini, lemon juice, and water to make the tahini sauce.
  7. 7Warm the pita bread. Fill each pita with falafel, cucumber, tomato, lettuce, and tahini sauce. Serve immediately.
