  • 1 cup Glutinous Rice Flour
  • 1/2 cup Tapioca Flour(replaces Wheat Flour)
  • 1 teaspoon Pandan Extract
  • 3/4 cup Water
  • 1/2 cup Palm Sugar (Gula Jawa), finely chopped
  • 1 cup Grated Coconut, for coating
  • 1/4 teaspoon Salt

Instructions

  1. 1In a bowl, mix glutinous rice flour and tapioca flour.
  2. 2Add pandan extract and slowly add water, mixing until a smooth, pliable dough forms.
  3. 3Bring a pot of water to a boil.
  4. 4Take a small amount of dough and flatten it. Place a small amount of palm sugar in the center.
  5. 5Shape the dough into a ball, ensuring the palm sugar is completely sealed inside.
  6. 6Gently drop the ball into the boiling water. Repeat with the remaining dough.
  7. 7Cook until the balls float to the surface, indicating they are cooked through.
  8. 8Remove the balls with a slotted spoon and immediately roll them in grated coconut.
  9. 9Serve warm.
