Ingredients

  • 8 pieces Chicken pieces (drumsticks, thighs)
  • 4 tablespoons Galangal (fresh, grated)
  • 2 tablespoons Turmeric (fresh, grated)
  • 4 cloves Garlic
  • 6 pieces Shallots
  • 3 pieces Candlenuts (kemiri)
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Sugar
  • 1 cup Coconut milk
  • 2 cups Vegetable oil (for frying)

Instructions

  1. 1Grind or blend the galangal, turmeric, garlic, shallots, candlenuts (or macadamia nuts), coriander powder, cumin powder, salt, and sugar into a fine paste.
  2. 2Marinate the chicken pieces with the spice paste and coconut milk for at least 30 minutes (or up to overnight in the refrigerator).
  3. 3Heat vegetable oil in a large pan or wok over medium-high heat.
  4. 4Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes per side.
  5. 5Remove the chicken and drain on paper towels.
  6. 6Serve hot with rice and your favorite Indonesian side dishes.
