  • 1 cup Rice Flour
  • 1/4 cup Tapioca Starch
  • 1.5 cups Coconut Milk
  • 1 teaspoon Pandan Extract
  • 1/4 teaspoon Salt
  • 1.5 cups Grated Coconut (fresh)
  • 1/2 cup Palm Sugar
  • 1/2 cup Water

Instructions

  1. 1Prepare the filling: In a pan, combine grated coconut, palm sugar, and water. Cook over medium heat, stirring constantly, until the coconut is moist and the sugar is dissolved. Set aside to cool.
  2. 2Prepare the pancakes: In a bowl, mix rice flour, tapioca starch, coconut milk, pandan extract, and salt until smooth.
  3. 3Heat a lightly oiled non-stick pan over medium heat. Pour a thin layer of batter onto the pan, swirling to create a thin pancake.
  4. 4Cook until the edges start to lift and the pancake is cooked through. Remove from the pan and let it cool slightly.
  5. 5Place a spoonful of the coconut filling in the center of each pancake. Fold the sides inward and roll it up tightly.
