Ingredients

  • 4 cups Cooked rice (day-old preferred)
  • 1.5 cups Soy-free kimchi, chopped
  • 3 tbsp Coconut aminos
  • 2 tbsp Avocado oil
  • 0.5 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 0.5 cup Carrot, diced
  • 4 large Egg
  • 1 tsp Sesame oil
  • 2 stalks Green onions, chopped

Instructions

  1. 1Heat avocado oil in a large skillet or wok over medium heat.
  2. 2Add chopped onion, garlic, and diced carrot. Sauté for 2-3 minutes until slightly softened.
  3. 3Add soy-free kimchi and cook for another 2-3 minutes.
  4. 4Add cooked rice and coconut aminos. Stir-fry for 5-7 minutes, or until the rice is heated through and well combined.
  5. 5In a separate pan, fry the eggs to your liking.
  6. 6Drizzle sesame oil over the fried rice.
  7. 7Serve the kimchi fried rice topped with a fried egg and garnished with chopped green onions.
