Keto Greek Lemon Herb Salmon with Asparagus

Ingredients

  • 4 6 oz Salmon fillets
  • 1 lb Asparagus
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 0.5 tsp Garlic powder

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Place the 1 lb of asparagus on a baking sheet. Drizzle the asparagus with 1 tablespoon of olive oil. Toss the asparagus to coat evenly.
  3. 3In a small bowl, combine the 2 tablespoons of lemon juice, 1 teaspoon of dried oregano, 0.5 teaspoon of garlic powder, and the remaining 1 tablespoon of olive oil. Whisk these ingredients together until well combined.
  4. 4Arrange the 4 salmon fillets on a separate baking sheet. Brush the tops of the salmon fillets with the lemon-herb mixture you just made.
  5. 5Place both the baking sheet with the asparagus and the baking sheet with the salmon into the preheated oven. Bake for 12 to 15 minutes. The salmon is cooked through when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C). The asparagus is tender when it is easily pierced with a fork.
  6. 6Remove the salmon and asparagus from the oven. Serve immediately.
