  • 1 medium Onion
  • 2 tbsp Sweet paprika
  • 1 tbsp Tomato paste
  • 1 cup Vegetable broth
  • 4 oz Dairy-free Cream Cheese
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Peel and dice the potatoes. Chop the onion.
  2. 2Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  3. 3Stir in paprika and tomato paste. Cook for 1 minute.
  4. 4Add potatoes and vegetable broth. Bring to a simmer, then reduce heat and cover. Simmer for 20 minutes, or until potatoes are tender.
