Ingredients

  • 1 lbs Chicken thighs
  • 2 medium Bell peppers (yellow, red)
  • 3 medium Tomatoes
  • 1 large Onion
  • 4 oz Smoked sausage (allergen-free)
  • 2 tbsp Olive oil
  • 1 tbsp Sweet paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Cut chicken thighs into bite-sized pieces. Slice bell peppers and tomatoes. Chop the onion.
  2. 2Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the chicken on all sides, then remove from the pot and set aside.
  3. 3Add onion to the pot and cook until softened, about 5 minutes.
  4. 4Add bell peppers and cook for another 5 minutes.
  5. 5Stir in tomatoes, smoked sausage, paprika, salt, and pepper.
  6. 6Return the chicken to the pot. Bring to a simmer, then reduce heat and cover. Simmer for 25 minutes, or until chicken is cooked through and vegetables are tender.
