Ingredients

  • 1 cup Mung bean flour
  • 1 cup Water
  • 1/4 cup Carrot
  • 1/4 cup Green bell pepper
  • 1/4 cup Red bell pepper
  • 1/4 cup Onion
  • 1/4 tsp Salt
  • 2 tbsp Vegetable oil

Instructions

  1. 1Finely dice the carrot, green bell pepper, red bell pepper, and onion.
  2. 2In a bowl, whisk together the mung bean flour, water, and salt until smooth.
  3. 3Heat a lightly oiled square pan or skillet over medium-low heat.
  4. 4Pour a thin layer of the mung bean batter into the pan, spreading it evenly.
  5. 5Sprinkle a portion of the diced vegetables over the batter.
  6. 6Once the batter is almost set (but still slightly moist), use a spatula to carefully roll up the layer from one side to the other.
  7. 7Push the rolled omelet to one side of the pan. Pour another thin layer of batter into the empty space, spreading it evenly. Sprinkle with more diced vegetables.
  8. 8Once the second layer is almost set, continue rolling the first roll onto the second layer. Repeat this process until all the batter and vegetables are used up, creating a layered roll.
  9. 9Remove the rolled omelet from the pan and let it cool slightly. Slice into bite-sized pieces and serve.
