Ingredients

  • about 450 g Collard Greens
  • about 450 g Mustard Greens
  • about 450 g Turnip Greens
  • about 450 g Spinach
  • 1 large Onion
  • 1 large Green Bell Pepper
  • 2 stalks Celery
  • 4 cloves Garlic
  • 8 cups Vegetable Broth
  • 2 tbsp Cajun Seasoning
  • 1 leaf Bay Leaf
  • 6 cups Cooked Rice

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Wash the about 450 g Collard Greens, about 450 g Mustard Greens, about 450 g Turnip Greens, and about 450 g Spinach thoroughly. Then, chop them into bite-sized pieces.
  2. 2Prepare your vegetables: dice the 1 large Onion, dice the 1 large Green Bell Pepper, and slice the 2 stalks Celery. Mince the 4 cloves Garlic.
  3. 3In a large, heavy-bottomed pot or Dutch oven, heat the pot over medium heat (about 175°C / about 175°C). Add the diced onion, diced green bell pepper, and sliced celery. Cook, stirring occasionally, until the vegetables are softened, about 5 to 7 minutes. Do not let them brown.
  4. 4Add the minced garlic and 2 tbsp Cajun Seasoning to the pot. Cook, stirring constantly, until fragrant, about 1 minute. Be careful not to burn the garlic.
  5. 5Add the chopped about 450 g Collard Greens, about 450 g Mustard Greens, about 450 g Turnip Greens, and about 450 g Spinach to the pot. The pot will seem very full, but the greens will wilt down as they cook.
  6. 6Pour in the 8 cups Vegetable Broth and add the 1 Bay Leaf. Stir everything to combine.
  7. 7Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 1 hour and 30 minutes, or until all the greens are very tender. Stir occasionally to prevent sticking.
  8. 8Carefully remove and discard the 1 Bay Leaf from the pot. Taste and adjust seasoning if needed, though the Cajun seasoning and broth should provide ample flavor.
  9. 9Serve the Gumbo Z'herbes hot over the 6 cups Cooked Rice.
