Grind these ingredients until a fine, smooth paste forms.
- 2Place a large, heavy-bottomed pot or Dutch oven over medium-high heat (375°F / 190°C). Add the 2 tbsp of vegetable oil. Once the oil is hot, add the prepared spice paste and the 2 stalks of lemongrass (bruise the lemongrass stalks by hitting them with the back of a knife to release their flavor). Cook, stirring constantly, for 3 to 5 minutes until the paste is very fragrant and has slightly darkened in color.
