Ingredients

  • about 910 g Yam
  • 1/2 cup Cassava Flour
  • 2 cups Water
  • 1 cup Groundnuts (Peanuts)
  • 1/2 medium Onion
  • 2 medium Tomatoes
  • 1/2 small Scotch Bonnet Pepper
  • 1 teaspoon Ginger
  • 2 cloves Garlic
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Salt

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Peel the about 910 g of Yam and cut them into 2.54 cm cubes. Place the yam cubes in a large heavy-bottomed pot and add enough water to cover them. Bring the water to a boil over high heat, then reduce the heat to medium and cook for 15-20 minutes, or until the yam is fork-tender. Drain the yam well.
  2. 2Mash the drained yam in the pot using a potato masher or a fork until it is smooth. Gradually add the 1/2 cup of Cassava Flour to the mashed yam, mixing thoroughly until a cohesive mixture forms.
  3. 3Slowly add the 2 cups of Water to the yam and cassava flour mixture while stirring continuously. Continue mixing until you achieve a smooth, pliable dough consistency. If the dough seems too sticky, add a little more cassava flour, one tablespoon at a time, until it's manageable.
  4. 4Take about 2 tablespoons of the dough at a time and roll it between your palms to form small balls, about 2.54 cm in diameter. Place the formed balls on a clean plate.
  5. 5While the yam is boiling, prepare the peanut sauce. In a blender, combine the 1 cup of Groundnuts (Peanuts), 1/2 medium Onion (roughly chopped), 2 medium Tomatoes (roughly chopped), 1/2 small Scotch Bonnet Pepper (stem removed, seeds removed for less heat if desired), 1 teaspoon Ginger (peeled and roughly chopped), and 2 cloves Garlic (peeled). Blend until you have a smooth paste, adding a tablespoon or two of water if needed to help the blender.
  6. 6Heat the 2 tablespoons of Vegetable Oil in a medium saucepan over medium heat (176.7°C / 175°C). Add the blended peanut paste to the hot oil. Cook, stirring frequently, for 10 minutes until the sauce thickens slightly and the raw smell disappears.
  7. 7Add the 1 teaspoon of Salt to the peanut sauce. Continue to cook for another 5 minutes, stirring constantly, until the sauce is fragrant and has a rich aroma. If the sauce becomes too thick, stir in a little more water, a tablespoon at a time, until it reaches your desired consistency.
  8. 8To serve, place the wasa wasa balls on a plate and spoon the spicy peanut sauce over them.
