Ingredients

  • 1 cup Dried Tigernuts
  • 4 cups Water
  • 2.54 cm Ginger
  • 3 whole Dates
  • 0.5 teaspoon Vanilla Extract

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place the 1 cup of dried tigernuts in a medium bowl and cover them with water. Let them soak for at least 4 hours, or preferably overnight, until they are softened. This helps them blend more easily.
  2. 2Once the tigernuts have soaked, drain them completely and rinse them well under cool running water.
  3. 3Add the drained tigernuts to a blender. Pour in the 4 cups of fresh water. Add the 2.54 cm piece of ginger and the 3 whole dates. Blend on high speed for 1-2 minutes, or until the mixture is very smooth and creamy.
  4. 4Place a fine-mesh sieve over a large bowl or pitcher. If you have cheesecloth, you can line the sieve with it for extra fine straining. Pour the blended mixture into the sieve. Press down on the solids with the back of a spoon to extract as much liquid as possible. Discard the pulp left in the sieve.
  5. 5Stir the 0.5 teaspoon of vanilla extract into the strained tigernut liquid until it is well combined.
  6. 6Cover the bowl or pitcher and place it in the refrigerator. Chill the tigernut drink for at least 1 hour before serving. This allows the flavors to meld and makes the drink refreshing.
