  • 1 lb Spinach
  • 1 medium Onion
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Sumac
  • 2 tablespoons Olive Oil
  • 1 cup Rice Flour
  • 1/2 cup Tapioca Starch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Salt
  • 3/4 cup Water

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Wash and chop the spinach. Sauté the onion in olive oil until softened. Add the spinach and cook until wilted.
  3. 3Stir in the lemon juice, sumac, and salt. Let cool.
