Ingredients

  • 2 cups Gluten-Free All-Purpose Flour Blend
  • 1/2 cup Tapioca Starch
  • 3/4 cup Water
  • 1/2 teaspoon Salt
  • 1/4 cup Shortening
  • 2 tablespoons Sesame Paste
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Sesame Seeds

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a large bowl, combine the 2 cups of Gluten-Free All-Purpose Flour Blend, 1/2 cup of Tapioca Starch, and 1/2 teaspoon of Salt. Gradually add most of the 3/4 cup of Water to the dry ingredients, mixing until a dough forms; reserve about 1 tablespoon of the 3/4 cup of Water in a small dish for brushing later. Knead the dough in the bowl for 3-5 minutes until it feels smooth, then cover the bowl with a clean cloth or plastic wrap and let the dough rest at room temperature for 30 minutes. This resting period allows the dough to become more pliable and easier to work with.
  2. 2In a separate small bowl, combine the 2 tablespoons of Sesame Paste, 1 tablespoon of Sesame Oil, and 1/4 cup of Shortening. Stir these ingredients together thoroughly until they form a smooth, uniform paste.
  3. 3Divide the rested dough into 4 equal portions. On a clean, un-floured surface, take one portion of dough and use a rolling pin to roll it out into a thin rectangle, approximately 15.24 cm wide by 20.32 cm long. Evenly spread one-quarter of the prepared sesame paste filling over the entire surface of the rolled-out dough rectangle.
  4. 4Carefully fold the dough rectangle into thirds, like folding a letter: first fold one short end towards the center, then fold the other short end over the top to create a layered rectangle. Turn the folded dough 90 degrees, then use the rolling pin to gently roll it out again into a flatbread shape, about 12.7-15.24 cm in diameter and 0.635 cm thick. Repeat this rolling and folding process for the remaining 3 dough portions.
  5. 5Preheat your oven to 190°C. Place the 4 rolled flatbreads on a baking sheet. Lightly brush the top surface of each flatbread with the reserved 1 tablespoon of Water, then sprinkle the 2 tablespoons of Sesame Seeds evenly over the wet surface of the flatbreads.
  6. 6Bake the flatbreads in the preheated oven for 15-20 minutes. The shao bing are done when they are golden brown on top and feel crispy to the touch. Carefully remove the baking sheet from the oven and serve warm.
