- 3Once the tapioca pearls are cooked, carefully drain them into a colander. Rinse the pearls under cold running water until they are cool to the touch. Add the drained pearls to the saucepan with the sugar syrup. Let them simmer together over low heat for 10 minutes, stirring occasionally, to allow the pearls to absorb the sweetness.
- 4While the pearls are simmering in the syrup, brew the black tea. Place the 2 bags Black Tea Bags in a heatproof pitcher or bowl. Pour about 2 cups of hot water (just off the boil, around 200°F or 93°C) over the tea bags. Let the tea steep for 5 minutes, then remove and discard the tea bags. You should have a dark, fragrant tea.
- 5To assemble the bubble tea, divide the cooked tapioca pearls evenly between two serving glasses. Pour the brewed black tea over the pearls in each glass. Add the 1 cup of Milk to each glass. Add the 2 tbsp Sugar to each glass (or adjust to your preference if you want it less sweet).
