Ingredients

  • 2 cups Rice Flour
  • 1/2 cup Sugar
  • 2 tbsp Ghee (Clarified Butter)
  • 1/2 tsp Cardamom Powder
  • 1 cup Water
  • 2 cups Oil (for frying)

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a large mixing bowl, combine the 2 cups of Rice Flour, 1/2 cup of Sugar, 2 tablespoons of Ghee, and 1/2 teaspoon of Cardamom Powder. Mix these ingredients thoroughly until they are well combined.
  2. 2Gradually add the 1 cup of Water to the dry mixture, stirring continuously. Continue mixing until you achieve a smooth batter with a consistency that can be easily poured.
  3. 3Cover the bowl and let the batter rest at room temperature for at least 2 hours. This resting period allows the rice flour to fully hydrate, which is crucial for the texture of the sel roti.
  4. 4Pour the 2 cups of Oil into a deep frying pan and heat it over medium heat until it reaches a temperature of 176.7-190.6°C (175-190°C).
  5. 5Carefully pour a ladleful of the batter into the hot oil in a continuous circular motion to form a ring shape, approximately 10.16-12.7 cm (10-12 cm) in diameter. Fry for 2-4 minutes per side, or until each sel roti is golden brown and cooked through.
  6. 6Using a slotted spoon, carefully remove the cooked sel roti from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve the sel roti warm or at room temperature.
