Ingredients

  • 4 cups Cooked Jasmine Rice
  • 1 lb Shrimp
  • 1/4 cup Coconut Aminos
  • 3 cloves Garlic
  • 2 Shallots
  • 1 tsp Chili Paste
  • 1/2 cup Peas
  • 1/2 cup Carrots
  • 2 Eggs
  • 2 tbsp Vegetable Oil

Instructions

  1. 1Heat oil in a wok or large skillet over medium-high heat.
  2. 2Add minced garlic and shallots, and cook until fragrant.
  3. 3Add shrimp and cook until pink.
  4. 4Stir in rice, coconut aminos, and chili paste. Mix well.
  5. 5Add peas and carrots. Cook until heated through.
  6. 6Push rice to one side of the pan and crack eggs onto the empty side. Scramble eggs and then mix with the rice.
  7. 7Serve immediately.
