Gluten-Free Koose (Bean Cakes)

Ingredients

  • 1 cup Black-Eyed Peas
  • 1/2 cup Red Onion
  • 1/4 tsp Scotch Bonnet Pepper
  • 1 tsp Ginger
  • 1/2 tsp Salt
  • 2 cups Vegetable Oil

Instructions

  1. 1Soak the black-eyed peas in water for at least 4 hours, or preferably overnight.
  2. 2Drain and rinse the soaked black-eyed peas.
  3. 3In a food processor, combine the black-eyed peas, red onion, scotch bonnet pepper, ginger, and salt.
  4. 4Process until you have a smooth paste. Add a little water if needed to help the blending process.
  5. 5Heat the vegetable oil in a deep frying pan or pot over medium-high heat.
  6. 6Spoon small dollops of the bean paste into the hot oil, being careful not to overcrowd the pan.
  7. 7Fry the koose for 3-4 minutes on each side, or until golden brown and crispy.
  8. 8Remove the koose from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. 9Serve warm and enjoy!
