Ingredients

  • 1 cup Dried Fava Beans
  • 1 can Coconut Milk
  • 2 cloves Garlic (minced)
  • 2 tbsp Lemon Juice
  • 1 tsp Cumin Powder
  • 1/2 tsp Paprika
  • 2 tbsp Olive Oil
  • 2 tbsp Fresh Parsley (chopped)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 4 slices Gluten-Free Pita Bread

Instructions

  1. 1Soak fava beans in water overnight.
  2. 2Drain and rinse the fava beans. Place them in a pot with fresh water and bring to a boil. Reduce heat and simmer for 1 hour, or until tender.
  3. 3Drain the fava beans and return them to the pot.
  4. 4Add coconut milk, garlic, lemon juice, cumin powder, paprika, salt, and pepper to the pot.
  5. 5Simmer for 20 minutes, stirring occasionally, until the flavors meld together.
  6. 6Serve warm, garnished with fresh parsley and with gluten-free pita bread on the side.
