Ingredients

  • 1.5 lb Chicken Breast
  • 1/2 cup Plain Yogurt (dairy-free)
  • 2 tbsp Lemon Juice
  • 2 tbsp Ginger-Garlic Paste
  • 1 tsp Turmeric Powder
  • 2 tsp Garam Masala
  • 1 tsp Cumin Powder
  • 2 tbsp Tomato Paste
  • 1 can (14 oz) Diced Tomatoes
  • 1 can (13.5 oz) Coconut Milk
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • for garnish Cilantro

Instructions

  1. 1Cut the chicken breast into bite-sized pieces. Marinate with dairy-free yogurt, lemon juice, ginger-garlic paste, turmeric, garam masala, cumin, and salt. Refrigerate for at least 30 minutes.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add the marinated chicken and cook until browned on all sides.
  4. 4Stir in tomato paste and diced tomatoes. Cook for 5 minutes.
  5. 5Pour in coconut milk and simmer for 15-20 minutes, allowing the sauce to thicken.
  6. 6Garnish with fresh cilantro before serving. Serve with gluten-free naan or rice.
