Ingredients

  • 8 links Vegan Sausages
  • 4 large Potatoes
  • 1/2 cup Plant-Based Milk
  • 2 tablespoons Vegan Butter
  • 2 large Onions
  • 2 cups Vegetable Broth
  • 1 tablespoon Cornstarch
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Brown Sugar
  • 1/2 teaspoon Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Place the 8 links of Vegan Sausages in a single layer on a baking sheet. Cook for 15-20 minutes, or until browned and heated through, turning them halfway.
  2. 2While the sausages cook, peel the 4 large Potatoes and cut them into roughly 1-inch chunks. Place the potato chunks in a large heavy-bottomed pot and cover them with cold water. Add 1 teaspoon of Salt. Bring to a boil over high heat, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are easily pierced with a fork.
  3. 3While the potatoes boil, peel and thinly slice the 2 large Onions. Place a 10-inch skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes, or until they are soft, deeply golden brown, and caramelized. This low and slow cooking develops their sweetness.
  4. 4Once the potatoes are tender, carefully drain all the water from the pot. Return the pot to the stove over low heat for 1 minute to evaporate any remaining moisture. Add the 1/2 cup of Plant-Based Milk and 2 tablespoons of Vegan Butter to the pot with the potatoes. Mash the potatoes using a potato masher or fork until smooth and creamy. Stir in the 1/2 teaspoon of Black Pepper. Taste and add more salt if needed, but remember the gravy will also be seasoned.
  5. 5To the caramelized onions in the skillet, add the 2 cups of Vegetable Broth, 1 tablespoon of Soy Sauce, 1 teaspoon of Brown Sugar, and 1/2 teaspoon of Thyme. In a small bowl, whisk together the 1 tablespoon of Cornstarch with 2 tablespoons of cold water until smooth to create a slurry. Pour the cornstarch slurry into the skillet with the onions and broth. Stir constantly over medium heat for 2-3 minutes, or until the gravy has thickened to your desired consistency.
  6. 6Serve the cooked 8 links of Vegan Sausages alongside the creamy mashed potatoes. Spoon the rich onion gravy generously over the sausages and potatoes.
