Gluten-Free Anda Ghotala (Spiced Scrambled Eggs)

Ingredients

  • 4 Eggs
  • 1/4 cup Onion, finely chopped
  • 1/4 cup Tomato, finely chopped
  • 1 small Green chilies, finely chopped
  • 1/2 tsp Ginger-garlic paste
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Red chili powder
  • 1/4 tsp Garam masala
  • to taste Salt
  • 1 tbsp Oil or ghee
  • 1 tbsp Cilantro, chopped

Instructions

  1. 1In a bowl, whisk the eggs with salt, turmeric powder, red chili powder, and garam masala.
  2. 2Heat oil or ghee in a pan over medium heat. Add onion and sauté until golden brown.
  3. 3Add ginger-garlic paste and green chilies. Sauté for a minute.
  4. 4Add chopped tomatoes and cook until they soften.
  5. 5Pour the egg mixture into the pan and cook, stirring continuously, until the eggs are scrambled to your desired consistency.
  6. 6Garnish with cilantro and serve hot with gluten-free toast or on its own.
