Gigantes Plaki (Greek Baked Giant Beans)

Ingredients

  • 1 lb Dried Gigantes Beans
  • 1/4 cup Olive Oil
  • 1 large Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 3 cloves Garlic
  • 28 oz Crushed Tomatoes
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Oregano
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Fresh Parsley

Instructions

  1. 1Soak the gigantes beans in water overnight. Drain and rinse.
  2. 2Preheat oven to 350°F (175°C).
  3. 3Heat olive oil in a large oven-safe pot or Dutch oven over medium heat. Add onion, carrot, and celery and cook until softened. Add garlic and cook for 1 minute more.
  4. 4Add the drained beans, crushed tomatoes, tomato paste, oregano, sugar, salt, and pepper. Stir to combine.
  5. 5Bring to a simmer, then cover and bake for 1 1/2 hours, or until the beans are tender and the sauce has thickened. Stir occasionally.
  6. 6Stir in fresh parsley before serving.
