Ghanaian Spicy Millet Porridge (Hausa Koko)

Ingredients

  • 1 cup Millet Flour
  • 4 cups Water
  • 1 tablespoon Ginger
  • 1/2 teaspoon Red Pepper
  • 2-3 tablespoons Sugar
  • 1/4 teaspoon Salt

Instructions

  1. 1In a large heavy-bottomed pot, whisk together the 1 cup of Millet Flour and 1 cup of Water until you have a smooth paste with no lumps.
  2. 2Add the remaining 3 cups of Water, the 1 tablespoon of Ginger, and the 1/2 teaspoon of Red Pepper to the pot. Stir everything together well.
  3. 3Place the pot over medium heat. Bring the mixture to a boil, stirring constantly to prevent the millet flour from sticking to the bottom and forming lumps. This should take about 5-7 minutes.
  4. 4Once boiling, immediately reduce the heat to low. Cover the pot loosely and let the porridge simmer for 20-25 minutes. Stir it occasionally to ensure it doesn't stick and to help it thicken evenly. The porridge is ready when it has a thick, creamy consistency, similar to oatmeal.
  5. 5Remove the pot from the heat. Stir in the 2-3 tablespoons of Sugar and the 1/4 teaspoon of Salt until they are fully dissolved. Taste and add a little more sugar or salt if you prefer.
  6. 6Serve the Ghanaian Spicy Millet Porridge hot.
