Ingredients

  • 1/2 cup Rice
  • 6 cups Water
  • 1 can Coconut Milk
  • 2-4 tablespoons Sugar or Honey
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Nutmeg

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Measure the 1/2 cup of rice into a fine-mesh sieve and rinse it thoroughly under cold running water until the water runs clear.
  2. 2Pour the 6 cups of water into a large heavy-bottomed pot and add the rinsed 1/2 cup of rice.
  3. 3Bring the water to a rolling boil over high heat, then immediately reduce the heat to low, cover the pot tightly, and let it simmer for 30 to 35 minutes, or until the rice grains are very soft and have started to break down, and the liquid has thickened slightly.
  4. 4Carefully strain the cooked rice and liquid through a fine-mesh sieve set over a large bowl or another pot. Use the back of a spoon or a spatula to gently press on the cooked rice in the sieve to extract as much of the thickened liquid as possible.
  5. 5Pour the strained liquid back into the large heavy-bottomed pot. Add the 1 can of coconut milk, 2 to 4 tablespoons of sugar or honey (adjust to your preferred sweetness), the 1/2 teaspoon of vanilla extract, and the 1/4 teaspoon of nutmeg.
  6. 6Stir all the ingredients together until well combined. Heat the mixture gently over low heat for 5 to 10 minutes, stirring occasionally, until it is warmed through. Do not allow it to boil.
  7. 7Serve the Ghanaian Rice Water warm immediately, or let it cool to room temperature and then chill it in the refrigerator before serving cold.
