Ghanaian Rice Porridge (Aprapransa)

Ingredients

  • 1 cup Rice (long grain)
  • 4 cups Water
  • 1 can (13.5oz) Coconut Milk
  • 2-4 tablespoons Sugar
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Salt

Instructions

  1. 1Measure the 1 cup of long grain rice into a fine-mesh sieve and rinse it thoroughly under cold running water until the water runs clear. Drain well.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1 cup of rice, 4 cups of water, 1 can (13.5oz) of coconut milk, 1/2 teaspoon of ground ginger, and 1/4 teaspoon of salt.
  3. 3Place the pot over medium-high heat and bring the mixture to a rolling boil. This should take about 5-7 minutes.
  4. 4Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer gently for 30 to 40 minutes. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
  5. 5Check the porridge after 30 minutes; it is done when the rice is very soft and the mixture has thickened to a creamy consistency. If it is too thick, you can add a splash more water or coconut milk.
  6. 6Remove the pot from the heat and stir in 2 to 4 tablespoons of sugar, tasting and adding more until it reaches your desired sweetness.
  7. 7Serve the Ghanaian Rice Porridge warm.
