Ghanaian Millet Porridge (Dairy-Free)

Ingredients

  • 1/2 cup Millet Flour
  • 3 cups Dairy-Free Milk (Coconut or Almond)
  • 1 cup Water
  • 1 teaspoon Vanilla Extract
  • 2-3 tablespoons Sugar or Honey
  • 1 pinch Pinch of Salt

Instructions

  1. 1In a large, heavy-bottomed pot, whisk together the 1/2 cup millet flour, 3 cups dairy-free milk, and 1 cup water until there are no lumps.
  2. 2Place the pot over medium heat. Bring the mixture to a boil, stirring constantly with a whisk to prevent the millet flour from sticking to the bottom and forming lumps. This should take about 5-7 minutes.
  3. 3Once boiling, immediately reduce the heat to low. Let the porridge simmer gently for 15-20 minutes. Stir occasionally to ensure it doesn't stick and to help it thicken.
  4. 4The porridge is ready when it has thickened to your desired consistency. It should coat the back of a spoon. You will notice it is no longer watery.
  5. 5Remove the pot from the heat. Stir in the 1 teaspoon vanilla extract, 2-3 tablespoons sugar or honey, and 1 pinch salt until fully combined.
  6. 6Serve the Ghanaian Millet Porridge hot.
