Gamja Jorim (Braised Potatoes)

Small potatoes braised in a sweet and savory soy sauce-based glaze. A popular Korean side dish that's great as a snack too.

Ingredients

  • 500 g Small Potatoes
  • 3 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 1 tbsp Mirin (Sweet Rice Wine)
  • 1 clove Garlic, minced
  • 1/2 cup Water
  • 1 tsp Sesame Oil
  • 1 tsp Sesame Seeds

Instructions

  1. 1Wash the 500 g Small Potatoes. Peel the potatoes. Cut the potatoes into bite-sized pieces, about 1 inch by 1 inch.
  2. 2In a large, heavy-bottomed pot, combine the 3 tbsp Soy Sauce, 2 tbsp Sugar, 1 tbsp Mirin (Sweet Rice Wine), 1 clove Garlic (minced), and 1/2 cup Water. Stir these ingredients together.
  3. 3Place the pot on the stove over medium-high heat (375°F / 190°C). Bring the liquid to a rolling boil, which should take about 3-5 minutes.
  4. 4Carefully add the prepared potato pieces to the boiling sauce in the pot. Reduce the heat to medium (300°F / 150°C).
  5. 5Cover the pot and let the potatoes simmer for 20-25 minutes. Stir occasionally to ensure the potatoes cook evenly and the sauce coats them. The potatoes are done when they are tender when pierced with a fork and the sauce has thickened into a glaze.
  6. 6Once the potatoes are tender and glazed, remove the pot from the heat. Stir in the 1 tsp Sesame Oil and the 1 tsp Sesame Seeds.
  7. 7Serve the Gamja Jorim warm or at room temperature.
