Ingredients

  • about 450 g Potatoes, peeled and cubed
  • 4 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 1/2 cup Water
  • 1 tsp Sesame Oil
  • 1 tsp Sesame Seeds

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Cut the about 450 g of peeled potatoes into 2.54 cm (2.5 cm) cubes.
  2. 2In a medium saucepan, combine the about 450 g of cubed potatoes, 4 tbsp of soy sauce, 2 tbsp of sugar, and 1/2 cup of water.
  3. 3Place the saucepan over medium-high heat and bring the mixture to a rolling boil. The liquid will reach approximately 100°C. This process will take about 5 to 7 minutes.
  4. 4Once the mixture is boiling, immediately reduce the heat to low, maintaining a gentle simmer where the liquid is around 90.56-96.11°C (90-96°C). Cover the saucepan with a lid and let it simmer for 20 to 25 minutes, stirring the contents every 5-7 minutes to prevent sticking.
  5. 5After 20 minutes, check the potatoes for tenderness by carefully piercing one with a fork; it should be very easy to pierce. The sauce should also have thickened into a glossy glaze. If the sauce is still thin, continue to simmer uncovered for an additional 3 to 5 minutes, stirring constantly, until it thickens.
  6. 6Remove the saucepan completely from the heat. Stir in the 1 tsp of sesame oil until it is fully mixed into the glaze.
  7. 7Transfer the braised potatoes and glaze to a serving dish. Just before serving, sprinkle the 1 tsp of sesame seeds evenly over the top.
