Ingredients

  • about 450 g Potatoes
  • 3 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 1 tbsp Mirin
  • 1 clove Garlic
  • 1 tbsp Vegetable Oil
  • 1 tsp Sesame Oil
  • 1 tsp Sesame Seeds
  • 1/2 cup Water

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Place about 450 g of potatoes in a large skillet or pan. Add 1 tbsp of vegetable oil. Heat the pan over medium heat, about 150°C. Cook the potatoes for 5 minutes, stirring occasionally, until they begin to look slightly browned.
  2. 2Add the 3 tbsp of soy sauce, 2 tbsp of sugar, 1 tbsp of mirin, 1 clove of minced garlic, and 1/2 cup of water to the pan with the potatoes. Stir everything together. Turn the heat up slightly to bring the mixture to a gentle simmer.
  3. 3Once simmering, reduce the heat to low, about 95°C. Cover the pan with a lid and cook for 15 to 20 minutes. The potatoes should become tender, and the sauce will start to thicken.
  4. 4Remove the lid from the pan. Continue to cook uncovered for another 5 minutes. This will allow the sauce to reduce further and coat the potatoes nicely.
  5. 5Stir in 1 tsp of sesame oil until it is well combined with the potatoes and sauce.
  6. 6Transfer the Gamja Jorim to a serving dish. Sprinkle the 1 tsp of sesame seeds over the top. Serve warm or at room temperature.
