Ingredients

  • 1 cup Brown Lentils
  • 1/4 cup Olive Oil
  • 1 medium Onion
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 6 cups Vegetable Broth
  • 1 tsp Dried Oregano
  • 1 leaf Bay Leaf
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Red Wine Vinegar

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Measure 1 cup of brown lentils and rinse them under cold running water until the water runs clear.
  2. 2Place a large heavy-bottomed pot on the stove over medium heat (176.7°C/175°C). Add the 1/4 cup of olive oil. Once the oil is shimmering, add the 1 medium onion, 1 medium carrot, and 1 stalk of celery, all chopped into 1.27 cm pieces. Cook, stirring occasionally, for 8-10 minutes, or until the vegetables are softened and the onion is translucent.
  3. 3Add the 2 cloves of garlic, minced, and the 2 tablespoons of tomato paste to the pot. Cook for 1 minute more, stirring constantly, until the garlic is fragrant.
  4. 4Pour in the 6 cups of vegetable broth. Add the rinsed 1 cup of brown lentils, 1 teaspoon of dried oregano, 1 bay leaf, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir everything together.
  5. 5Increase the heat to medium-high and bring the soup to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 40-50 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.
  6. 6Carefully remove and discard the 1 bay leaf from the pot. Stir in the 2 tablespoons of red wine vinegar.
  7. 7Serve the Fakes hot.
