Ingredients

  • 1 cup Rice Flour
  • 1/4 cup Tapioca Flour
  • 1 cup Coconut Milk
  • 1 teaspoon Pandan Extract (or green food coloring)
  • 2 tablespoons Sugar
  • 1/4 teaspoon Salt
  • 2 cups Coconut Milk (for sauce)
  • 2 tablespoons Rice Flour (for sauce)
  • 1/4 cup Sugar (for sauce)
  • 2 leaves Pandan Leaves (for sauce)
  • 1/2 cup Es Sirup (Red Syrup)
  • 1 cup Ice Cubes

Instructions

  1. 1Prepare the green dough: In a bowl, mix rice flour, tapioca flour, coconut milk, pandan extract, sugar, and salt until smooth.
  2. 2Steam the bananas until slightly soft but still firm, about 15 minutes. Let cool slightly.
  3. 3Coat each banana with the green dough mixture, ensuring it is fully covered.
  4. 4Steam the coated bananas for another 20 minutes, or until the dough is cooked through.
  5. 5Prepare the coconut milk sauce: In a saucepan, combine coconut milk, rice flour, sugar, and pandan leaves. Cook over medium heat, stirring constantly, until the sauce thickens.
  6. 6To serve: Slice the steamed green bananas. Place slices in a bowl, add ice cubes, drizzle with coconut milk sauce and es sirup.
