Instructions

  1. 1In a medium bowl, combine the 3 tbsp Gochujang (Korean chili paste), 1 tbsp Gochugaru (Korean chili flakes), 2 tbsp Soy sauce (gluten-free), 3 cloves Garlic, minced, 1 tsp Ginger, minced, 1 tbsp Sesame oil, 2 tbsp Rice wine (mirin), and 1/4 tsp Black pepper. Stir until well combined.
  2. 2Add the about 680 g Boneless, skinless chicken thighs, cut into bite-sized pieces, to the bowl with the sauce. Mix thoroughly to ensure all the chicken pieces are coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. 3Place a large skillet or wok over medium-high heat, approximately 204.4°C (200°C).
  4. 4Add the marinated about 680 g Boneless, skinless chicken thighs to the hot skillet. Stir-fry for 5-7 minutes, until the chicken is browned on all sides and cooked through, reaching an internal temperature of 74°C.
  5. 5Add the 2 cups Cabbage, chopped, 1/2 medium Onion, sliced, 1 medium Sweet potato, peeled and cubed, and 1/2 medium Carrot, sliced, to the skillet with the chicken. Continue to stir-fry for 10-15 minutes, or until the vegetables are tender but still slightly crisp.
  6. 6Serve the Dak Galbi hot over rice.
