Ingredients

  • about 680 g Boneless, skinless chicken thighs
  • 1/4 cup Soy sauce
  • 2 tbsp Brown sugar
  • 4 cloves Garlic
  • 1 tbsp Ginger
  • 1 tbsp Sesame oil
  • 1 tbsp Gochujang (Korean chili paste)
  • 1/4 tsp Black pepper
  • 2 stalks Green onions
  • 1 tsp Sesame seeds

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a bowl, whisk together the 1/4 cup soy sauce, 2 tablespoons brown sugar, 4 cloves minced garlic, 1 tablespoon grated ginger, 1 tablespoon sesame oil, 1 tablespoon gochujang, and 1/4 teaspoon black pepper until well combined.
  2. 2Cut the about 680 g boneless, skinless chicken thighs into 2.54 cm pieces. Add the chicken pieces to the marinade and mix thoroughly to ensure every piece is coated.
  3. 3Let the chicken marinate for at least 20 minutes at room temperature, or cover the bowl and refrigerate for up to 4 hours.
  4. 4Heat a grill or a large 30.48 cm skillet over medium-high heat until hot. If using a skillet, add a tablespoon of neutral oil (not listed, omit if not available).
  5. 5Add the marinated chicken to the hot grill or skillet in a single layer, being careful not to overcrowd the pan. Cook for 4-5 minutes per side, until the chicken is cooked through and has a slight char. The internal temperature should reach 74°C.
  6. 6While the chicken is cooking, thinly slice the 2 stalks of green onions.
  7. 7Remove the cooked chicken from the heat. Garnish the Dak Bulgogi with the sliced green onions and 1 teaspoon sesame seeds. Serve immediately with rice and side dishes.
