  • 2 cups All-purpose flour
  • 1 cup Rye flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground cloves
  • 1 teaspoon Ground ginger
  • 1/4 teaspoon Nutmeg
  • 1 cup Brown sugar
  • 1/2 cup Molasses
  • 1/2 cup Vegetable oil
  • 1/2 cup Unsweetened applesauce
  • 1 cup Hot coffee
  • 1/2 cup Raisins (optional)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. 2In a large bowl, whisk together all-purpose flour, rye flour, baking soda, baking powder, cinnamon, cloves, ginger, and nutmeg.
  3. 3In a separate bowl, combine brown sugar, molasses, vegetable oil, applesauce, and hot coffee. Mix well.
  4. 4Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. 5Stir in the raisins (optional).
  6. 6Pour the batter into the prepared baking pan.
  7. 7Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8Let the cake cool in the pan before slicing and serving.
